<p>Discover Valpolicella with us: a practical and engaging course designed for those who want to understand wine beyond the glass. Three meetings in the winery that combine brief and concrete explanations, guided tastings and opportunities to talk with our team. An opportunity to get closer to the territory, learn about the native grape varieties and understand the winemaking choices that give Domìni Veneti wines their identity.</p>



<h3 class="wp-block-heading"><strong>PROGRAM SUMMARY</strong></h3>



<ul class="wp-block-list">
<li><strong>Lesson 1</strong> – Territory and grape varieties: characteristics of Valpolicella and initial tasting notes.</li>



<li><strong>Lesson 2</strong> – Techniques and styles: the role of drying, Ripasso and ageing comparisons.</li>



<li><strong>Lesson 3</strong> – Pairings and conviviality: how to enhance wine at the table. The evening includes a substantial aperitif — not a full dinner, but a carefully selected range of appetisers and small tastings designed to experiment with pairings with the wines being tasted.</li>
</ul>



<p>Each session includes guided tastings (with tasting notes), information material and, at the end of the course, a certificate of participation will be issued. Approximate duration of each evening: 1h30.</p>

<h4 class="wp-block-heading"><strong><strong>SHORT BIO OF FRANCESCA MARASTONI</strong></strong></h4>



<p>Born in Verona, Francesca Marastoni has extensive experience in the wine sector and international trade. She graduated in Political Science from the University of Padua and furthered her education with specialist training in enology (WSET – Wine and Spirit Educational Trust) and an AIS sommelier diploma. After gaining significant experience in Veronese wineries, she joined Cantina Valpolicella Negrar in 2014 as Key Account Manager, with responsibility for the Northern European and UK markets and the winery&#8217;s direct sales outlets. Over the years, she has looked after international clients, developed new products and attended key trade fairs such as Prowein and Vinitaly, gaining in-depth knowledge of business dynamics and the global wine sector.</p>



<h4 class="wp-block-heading"><strong><strong>VALPOLICELLA NEGRAR WINERY</strong></strong></h4>

<p>A wine designed for those who often choose instinctively, attracted only by the low price, the name, and the unusual light pearlescent purple colour of the label. A wine designed and dedicated to young people, that segment of consumers that the wine world is increasingly courting, but with results that are not always exciting. It is the Valpolicella Classico DOC 2024 from Cantina di Negrar.</p>

<h2 class="wp-block-heading">THE NEW VALPOLICELLA CLASSICO DOC 2024</h2>



<p>This is the new fresh Valpolicella from Cantina Valpolicella in Negrar and also, probably, a new way of understanding the red wines of this area, which has become famous worldwide for products made from dried grapes such as Amarone and Ripasso. These are important, structured wines with dark, deep colours, complex bouquets, softness and high alcohol content. All qualities that until recently made the fortune of the wines of this Veronese appellation, and which today seem to be of much less interest. ‘Until a few years ago, acidity was perceived as a problem, while smoothness was a virtue, but now it&#8217;s the exact opposite,’ confirms the enologist and general manager of the winery, Daniele Accordini. &#8220;Today, we are looking for verticality, i.e. the freshness given by the acidity of the wine and a low residual sugar content. This Valpolicella has only 3 grams per litre. It is an easy-to-drink, undemanding, immediate wine and, in my opinion, represents a young product.&#8221;&nbsp;</p>



<p>Like all young products for young people, it is a very straightforward wine that is well suited to our times. In summer, it can be served straight from the fridge, but it can also be placed in a picnic cooler bag and opened on the spot without any problems. There is no need for a corkscrew, a tool that is as useful as it is inconvenient to carry around, because Valpo bottles have screw caps. &#8216;Compared to our usual Valpolicella Classico from the Domini Veneti line, this wine is lighter in every way: colour, alcohol (only 11.5 degrees), structure,&#8217; continues Accordini. We designed it starting from the countryside, choosing grapes from 20-25-year-old vineyards, located between 200 and 250 metres above sea level, trained using the double pergola method, grassed and irrigated using drip irrigation.&#8221;</p>
